From fishermen’s leftovers to a local landmark

Pannfisch comes from the coast. Yesterday’s fish went into the pan with fried potatoes and a punchy mustard sauce – honest, filling, no fuss. Today the dish is on the menu in every Hanseatic city, and in Bremen it belongs to the Schlachte as much as the river itself.

We call ours Bremen Pannfisch and stay close to the original: we take the catch of the day, sear it until the skin has colour, and serve it with handmade fried potatoes, creamy mustard sauce and a small side salad. No gimmicks – produce, craft, timing.

Because the fish changes with the delivery, Pannfisch never tastes exactly the same two days running. That is the point: it is as fresh as the market allows. If you want to know what is in the pan today, ask our team – you will get an honest answer.

Which fish is used?

It changes with the delivery – that is why it is called “catch of the day”. Depending on the day it may be pollock, cod or another firm white fillet. Just ask our team what is in the pan today.

Where is Kangaroo Island and how do I get there?

Schlachte 30A, 28195 Bremen – on the riverside promenade in the city centre. It is about a five-minute walk from the market square and town hall; the Am Brill tram stop is around the corner, and Bremen central station is roughly 15 minutes on foot or a few tram stops away.
